Andres Rojas | Colombia | Washed Process
I'm so excited to be teaming up with Cofinet to bring this delicious Colombian microlot in to the roastery. I first met with Carlos in 2016, when he brought a selection of delicious Colombian coffees over to WA for a community cupping, and I've been looking forward to buying from him since.
Carlos is a Colombian coffee producer who has since moved to Australia, setting up Cofinet to import coffees from both his family and other great Colombian producers.
Our first lot from Cofinet is by producer Andres Rojas. The lot is a washed process Colombia variety. Colombia is a more recent varietal developed by the Colombian coffee federation as a coffee rust resistant variety. Coffee rust is a disease which can be devastating to susceptible crops - so it is great to see a resistant variety cupping so deliciously. Strict picking criteria was also employed to ensure even ripeness of cherries, improving cup quality further.
Coffee is all about relationships - and I'm excited to see what we will be able to learn from Carlos and Cofinet in the future. They are certainly using their knowledge as producers to both experiment on their own farms, and purchase from like minded producers to show us exactly what Colombia has to offer.
